  • 🌿 1/4 cup fresh mint leaves (chopped)
  • 🥄 1 teaspoon garam masala
  • 🥄 1 teaspoon biryani masala
  • 🥄 2 tablespoons cooking oil or ghee (clarified butter)
  • 🧈 2 tablespoons ghee (optional)
  • 🌟 A few saffron strands (optional)
  • 🌟 1/4 cup warm milk (for saffron)
  • 🧂 Salt to taste

Instructions

1. Marinate the Chicken:

  1. Prepare Marinade: In a large bowl, combine yogurt, minced garlic, minced ginger, green chilies, chopped cilantro, chopped mint leaves, lemon juice, turmeric powder, red chili powder, and salt.
  2. Marinate Chicken: Add the chicken pieces to the marinade and mix well. Cover and refrigerate for at least 1 hour, preferably overnight.

2. Prepare the Rice:

  1. Rinse Rice: Rinse 1.5 cups of basmati rice under cold water until the water runs clear.
  2. Soak Rice: Soak the rice in water for 30 minutes, then drain.
  3. Cook Rice: In a large pot, bring water to a boil. Add 1 teaspoon salt, cardamom pods, cloves, and bay leaf.
  4. Boil Rice: Add the drained rice to the boiling water. Cook until the rice is 70% cooked (it should still be a bit firm). Drain the rice and set aside.

3. Cook the Chicken:

  1. Heat Oil/Ghee: In a large pot or pressure cooker, heat 2 tablespoons of oil or ghee over medium heat.
  2. Cook Onions: Add sliced onions and sauté until golden brown.
  3. Add Garlic and Ginger: Add minced garlic and ginger, cook for 1-2 minutes until fragrant.
  4. Add Green Chilies and Tomatoes: Stir in green chilies and chopped tomatoes. Cook until the tomatoes become soft and oil starts to separate.
  5. Cook Chicken: Add the marinated chicken pieces to the pot. Cook until the chicken turns white.
  6. Add Spices: Stir in garam masala, biryani masala, and salt. Cook until the chicken is almost done and the oil starts to separate.

4. Layer the Biryani:

  1. Prepare Saffron Milk (Optional): If using saffron, dissolve a few saffron strands in 1/4 cup of warm milk. Set aside.
  2. Layer Rice: In the pot with chicken, layer the partially cooked rice over the chicken.
  3. Add Herbs and Spices: Sprinkle chopped cilantro, chopped mint leaves, and additional garam masala if desired.
  4. Drizzle Lemon Juice: Drizzle lemon juice over the rice.
  5. Add Ghee (Optional): Add dollops of ghee on top of the rice for extra flavor.

5. Cook the Biryani:

  1. Cover and Cook: Cover the pot with a tight-fitting lid. Cook on low heat for 20-25 minutes. This allows the flavors to meld and the rice to finish cooking.
  2. Rest: Turn off the heat and let the biryani rest for 10 minutes before opening the lid.

6. Serve:

  1. Fluff Rice: Gently fluff the biryani with a fork to mix the rice and chicken.
  2. Serve Hot: Serve the biryani hot with raita (yogurt sauce), salad, or your favorite side dish.

Enjoy your homemade Chicken Biryani! 🍗🍚✨
